Ingredients:

  • 2 cups of dried broad beans
  • 4 glasses of hot water
  • 1 large onion
  • 4 tablespoons of olive oil
  • Juice of half a lemon
  • 1 teaspoon of salt
  • 1 sugar cube
  • A pinch of dill

Preparation:

  • Chop the onions into small pieces and place them in a pan. Add olive oil to the pan and start cooking the onions.
  • When the onions turn slightly pink, add the broad beans. Then add 3 cups of hot water, sugar cubes and lemon juice. Cook over medium heat until the broad beans become soft.
  • You can add more hot water to the pan depending on the water absorption of the broad beans.
  • When the broad beans become soft, pour the mixture into the blender, and bring it to a puree consistency.
  • Place the mixture in a suitable container and let it chill in the refrigerator for at least 2 hours.
  • Optionally, you can serve the fava in a bowl or sliced ​​by adding olive oil and dill.

 

Babagannush Recipe

Ingredients:

  • 3 eggplants
  • 4 green peppers
  • 3 red capia peppers
  • 2 tomatoes
  • 2-3 cloves of garlic
  • 4 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 coffee spoon of pomegranate syrup

Preparation:

  • Roast tomatoes, eggplants, green and red peppers in a pan.
  • Place the roasted vegetables in a deep bowl, cover them with stretch film and let them rest for a while.
  • Peel the skins of the vegetables you are resting. Then chop the vegetables finely with the help of a knife.
  • Place the chopped vegetables on a serving plate.
  • For the sauce, crush the garlic and put it in a bowl. Then add olive oil, salt and pomegranate syrup and mix.
  • Pour the sauce that you prepared over the vegetables and serve by mixing.

 

Mussels in Garlic Butter Recipe

Ingredients:

  • Approximately 800 grams of cleaned inner mussels
  • Lots of garlic
  • Olive oil
  • Salt

Preparation:

  • Pour plenty of olive oil into the pan.
  • Add the washed and drained mussels to the pan and cook over high heat, stirring gently, for 5-6 minutes.
  • After adding the garlic in a bowl, add some salt, crush it, and place it into the pan. Continue cooking with the mussels for about 1 more minute.
  • Place the cooked mussels and garlic on a serving plate. Serve it hot with olive oil on top.

 

Pastrami Hummus Recipe

Ingredients:

  • 2 cups of chickpeas
  • 2-3 slices of pastrami
  • 4-5 tablespoons of tahini
  • 3 tablespoons of olive oil
  • 2 cloves of garlic
  • 1 coffee spoon cumin
  • 1 coffee spoon of salt
  • 1 teaspoon black pepper
  • Juice of half a lemon

Preparation:

  • Soak and boil the chickpeas, then peel the boiled chickpeas well.
  • Place all the ingredients except pastrami in a food processor. You can adjust the consistency of the hummus as you wish.
  • Spread the mixture on a serving plate.
  • Chop the pastrami. Add olive oil to a small pan and cook the pastrami slices for 1-2 minutes.
  • Serve it hot by placing the cooked pastrami on top of the hummus.

 

Köpoğlu Recipe

Ingredients:

  • 2 eggplants
  • 3 green peppers
  • 1 large tomato
  • 1 clove of garlic
  • 4 tablespoons of strained yoghurt
  • 1 tablespoon tomato paste
  • 1 sugar cube
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt

Preparation:

  • Peel the eggplants into various shapes and chop them into small pieces.
  • Cut the green peppers in half.
  • Add vegetable oil in a deep pan and heat it. When the oil is hot, add the eggplants and peppers and fry.
  • Place the fried vegetables on a serving plate lined with paper towels to drain excess oil.
  • For the sauce, peel and grate the tomatoes.
  • Heat the olive oil in a pan, add the tomato paste and cook it. Then add grated tomatoes and continue cooking.
  • Add sugar, salt and pepper to the pan and cook until the sauce thickens.
  • Place the fried eggplants and peppers on a serving plate.
  • Crush the garlic and add it to the strained yogurt and mix.
  • Pour the yogurt sauce over the vegetables to cover them.
  • Pour the tomato sauce you prepared over the yogurt sauce and serve. Bon appetit!
